I have obtained all the electronic, electrical & necessary
components from one of several Christie AW3 platters & I want to
put together a bench top test rig from these components for troubleshooting & testing AW3 components. However, how do I mount the platter bearing & axle assembly & control sensor assembly before mounting the feed control plate assembly?

A test rig for AW-3 components, why? According to the Christie manual (Bevan also told me this) would be just to swap motor control cards and LED sensors between decks for ops checking purposes. The component on Christie platters most prone to failure is the LED sensors. In any case, I would recommend you obtaining a Christie platter tachometer for use in setting the rpm....this is a big time saver as timing the platter by counting revs is a real pain (been there-done that!).
