They are often custom made, but there are several off-the-shelf systems you can use such as

The manufacturer usually provides or comissions the content.
There is also some off-the-shelf content, mostly CGI animation, you can licence/purchase and adapt to your system.
If anything, it's the other way around. 3D in Dcinema is a derivative of 3D in Special Venues.
Most of the time, it's done with dual projection for 3D. For a good number of years now, you can also do single projection and use Infictec (the same used by Dolby) or Stereographics (the same used by RealD, who bought the company) 3D "technology"

The first 3D special venue I did used two (Sony) CRT video projectors and dual (Sony, again) CRV's (similar to laserdiscs, like these http://www.kyoeisha.com/rentals/s_video/recplay/lvr3000.html). We licensed the content from the producer who also displayed it in a major theme park in Florida for many years.
