Sure. But, what is most common is to create one's own HI output as a center-weighted mix. If you really wanted to get fancy, you could make it automatic and if a signal is detected on channel 7, to defer to that, if not provide the mix but with zero complaints, we always just provide the center-weighted mix.

There is a point of diminishing returns. For a while, I was providing the option to users but NOBODY ever wanted it. So, the mix is what they get.
Here is a "typical" HI/VI signal path for me. This one just happens to be a Dolby Atmos house so LC/RC are added to the mix too:

Note, I also bring the PA feed so microphones also get put into the HI mix...another thing that using track 7 would omit. The "Router 2x1" is where one has the option of the DCP HI (track 7).
BTW...if you are following along with my Blog over in Q-SYS Corner, the Sample 7.1 design also has a solution that I'll go into, when we get to it.

We're interested in installing both to give users a choice of their preference.
If you wanted DAS + Fidelio as well it might get more complicated, more routing of the AES to both systems etc.
It would be really cool to hear their preferences in a side by side like that.

Fidelio and Captiview are no more. They do the same thing. The only difference, from a patron's point of view, is that you plug the headphones into the DAS audio or look at the DAS for captions (or a combination of both captions and audio). Fidelio had a body pack to plug the headphones into. Captiview had a display on a gooseneck to put into a cupholder...which is what DAS can do too.
